Colorful snack bars combine oats, homemade gummies, and freeze-dried candy for a tasty, playful treat.

# What You'll Need:

→ Snack Bar Base

01 - 2 cups rolled oats
02 - 1/2 cup almond butter or peanut butter
03 - 1/3 cup honey or maple syrup
04 - 1/4 cup unsalted butter, melted
05 - 1/2 teaspoon vanilla extract
06 - Pinch of salt

→ Homemade Gummies

07 - 1 cup 100% fruit juice (such as apple, berry, or orange)
08 - 2 tablespoons unflavored gelatin
09 - 2 to 3 tablespoons honey or agave syrup

→ Mash-Up Toppings

10 - 1 cup freeze-dried fruit (such as strawberries or raspberries), lightly crushed
11 - 1 cup freeze-dried candy (such as Skittles, marshmallows, or similar), crushed or chopped

# Step-by-Step Guide:

01 - Line an 8x8-inch baking pan with parchment paper. In a large bowl, combine rolled oats, almond butter, honey, melted butter, vanilla extract, and salt. Mix thoroughly until even throughout. Press mixture firmly and evenly into prepared pan. Refrigerate while gummies are being made.
02 - Pour fruit juice into a small saucepan. Sprinkle unflavored gelatin over juice and let stand for 5 minutes to bloom. Heat gently over low heat, stirring until gelatin is dissolved. Mix in honey or agave syrup, then pour mixture into a parchment-lined small baking dish. Chill for 45 to 60 minutes until completely set.
03 - Remove chilled gummies from pan and cut into small cubes.
04 - Remove oat base from refrigerator. Evenly scatter gummy cubes, freeze-dried fruit, and freeze-dried candy over surface. Press gently so toppings adhere to base.
05 - Return pan to refrigerator and chill for an additional 10 to 15 minutes for full setting.
06 - Using parchment edges to lift, remove snack mixture from pan and place onto a cutting board. Slice into 12 bars.
