Pesto Egg Grilled Cheese (Print Version)

Buttery toasted bread with pesto eggs and melty cheese creates a flavorful, savory twist for any meal.

# What You'll Need:

→ Eggs & Pesto

01 - 2 large eggs
02 - 2 tablespoons basil pesto
03 - 1 tablespoon olive oil

→ Bread & Cheese

04 - 4 slices sourdough or country bread
05 - 4 slices mozzarella cheese
06 - 2 tablespoons unsalted butter, softened

→ Seasonings

07 - Salt, to taste
08 - Freshly ground black pepper, to taste

# Step-by-Step Guide:

01 - Heat olive oil in a nonstick skillet over medium heat. Add basil pesto and swirl to combine.
02 - Crack eggs into the skillet. Cook until whites are set yet yolks remain slightly runny, approximately 2–3 minutes. Season lightly with salt and pepper, then remove from heat and set aside.
03 - Butter one side of each bread slice. Place two slices, butter side down, on a clean surface. Layer each with a slice of mozzarella, a pesto-cooked egg, another cheese slice, then top with remaining bread slices, butter side up.
04 - Wipe skillet clean, then heat over medium-low. Place sandwiches in the pan and cook 2–3 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted.
05 - Remove sandwiches from heat, let rest for 1 minute. Slice and serve immediately.

# Top Tips:

01 -
  • The way pesto infuses the eggs creates this incredible savory flavor that regular fried eggs just cant match
  • Melty cheese combined with crispy buttery bread is basically childhood comfort food elevated
  • Takes literally 20 minutes from start to finish but tastes like something from a fancy brunch spot
02 -
  • Medium-low heat is crucial because high heat burns the bread before the cheese melts
  • Letting the sandwiches rest for 1 minute after cooking prevents that molten cheese from escaping when you slice
03 -
  • Use a spatula to press down gently while cooking for better contact with the pan
  • If the bread is browning too fast, reduce the heat and cover the pan briefly to melt the cheese
