# Step-by-Step Guide:

01 - Place peeled and cubed potatoes in a large pot, cover with cold water, add salt, and bring to a boil. Cook until tender, 15 to 18 minutes. Drain and return potatoes to pot.
02 - Mash potatoes with butter, milk, shredded cheddar, and ground white pepper until smooth and creamy. Keep warm.
03 - Heat olive oil and butter in a large skillet over medium-high heat. Season pork chops with salt and black pepper. Sear chops for 3 to 4 minutes per side until golden and an internal temperature of 145°F is reached. Add thyme if desired. Transfer chops to a plate and cover loosely with foil.
